Strawberries were going like crazy at our street market this weekend. Four baskets for 3 euro. You know they’re gonna be good when you can actually smell them as you walk by. I was sold.
I have been wanting to try my hand at making scones and came across a delicious looking recipe a few weeks ago, so today was the day. This recipe is so easy. The original calls to use a food processor to make the dough, but I like getting my hands in the gooey mix. It’s therapeutic. And there’s fewer dishes to clean up afterwords!
Here are the buttery beauties ready for the oven.
Oh, and you won’t regret making the strawberry butter. It’s a lovely substitute for clotted cream which is traditionally served with scones and strawberry preserves, but hard to find if you’re not in England.
Strawberry Lemon Scones
Recipe adapted from Sweet Pea’s Kitchen
2 cups all-purpose flour
1 Tbsp baking powder
3 Tbsp sugar
1/2 tsp salt
1 Tbsp lemon zest (from 1-2 lemons)
1 vanilla bean, seeds scraped out or 1 tsp pure vanilla extract
6 Tbsp un-salted butter, cold and cut into small cubes
1 cup fresh strawberries, diced
1 cup heavy cream
Instructions
Preheat oven to 425° F. Combine flour, baking powder, sugar, salt, lemon zest and vanilla bean seeds in a medium sized bowl and stir briefly (If using vanilla extract, add with the cream). Add cubed butter and work into flour mixture with hands and fingers until pea sized pieces form. This shouldn’t take more than a minute or two. Add strawberries and heavy cream. Incorporate with lightly floured hands until just combined, then turn dough out onto a floured work surface and gently form into a ball. Lightly pat the dough down until it is approximately an 8 inch round disk. Cut into 8 equal pieces and place on a baking pan lined with baking paper or a sil pat. Bake for 12 minutes, or until scones are nicely golden and crispy around the edges.
Strawberry Butter
6 Tbsp un-salted butter, at room temperature
1 Tbsp strawberry jam or preserves
Good pinch of course sea salt
Mix ingredients until just combined and serve with warm scones.
Enjoy every bite of strawberry-lemony goodness. A delightful way to start the day and the week!
