My flight is booked.
For better or for worse, change is a coming (again). I will be leaving beautiful Milan, without my husband, in just under a month. The little man and I will head back to California, via a short trip to visit family in Canada, and Scott will join us in June– hopefully in time to be present for the birth of our little girl!
After much consideration and the high possibility that Scott will be doing his MBA internship this summer in the States, we thought it best to plan to deliver there.
Oh change, you are an ever-present constant in my life.
But then, what would life be without it? I’ve come to embrace it and have learned that no matter what, one always learns and grows and becomes a more rounded, open-minded person when things don’t stay the same.
One thing that didn’t have to change? This weeks recipe for the Food Matters Project. I think I just needed to KNOW that something was going to turn out this week, so I followed the recipe exactly. I take that back, I omitted the bacon because I don’t eat red meat, but we’ll count that as an omission more so than a change!
Vegetable Coq au Vin.
Delicious. Loaded with vegetables. Layers of flavour. It made the house smell marvelous. I served it over cooked farro and it made a perfect, hearty, one-dish meal. Followed by Coconut Cake-in-a-Jar with Creamy Salted Caramel, it was a good night indeed.

I couldn’t see any reason to change up this recipe either and had the same delicious results. I wish I could say I served something as wonderful-sounding as Coconut Cake in a Jar for dessert though. Best of luck with all of the changes coming up!

That’s a great idea to put it over a farro! We just did it plain with some bread, but for the future this would be good idea!

I dont know what to comment onfirst…Vanilla & Lemon my 2 favourite things in cooking (plus chocolate), Living in Milan- I hope it is Italy and you get to enjoy the beautiful country and food and being pregnant.
