Strawberry-Peach Muffins

Most mornings come far too soon.

As the kiddos begin to stir, I savour those last peaceful moments with my eyes closed, knowing that they are about to end.

From there it’s a frenzy of morning snuggles, diaper changes, pouring of cereal, and preparing for a new day.

These muffins are packed full of sweet seasonal fruit and have just a hint of cinnamon. A perfectly comforting combination for those mornings that require just a few more peaceful moments.

Strawberry-Peach Muffins {Vegan}

Ingredients

2 cups all-purpose flour

1/3 cup wheat germ

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/2 tsp salt

1 cup almond milk

1 tsp vinegar

1/4 cup agave nectar

1/3 cup brown sugar

1/4 cup extra virgin olive oil

1 tsp vanilla extract

1 large peach, peeled and diced

1 cup fresh strawberries, hulled and diced

Rolled oats and turbinado sugar for sprinkling (optional)

Directions

Combine dry ingredients in a medium bowl. Add peaches and strawberries and stir to coat the fruit. (This prevents all the fruit from sinking to the bottom during baking.) In another bowl, combine milk, vinegar, agave nectar, sugar, olive oil, and vanilla. Whisk until well combined. Pour wet ingredients into the flour mixture and stir until combined. Pour batter into greased or paper lined muffin tin. Sprinkle tops with rolled oats and turbinado sugar and then bake in a 375 degree oven for 25 minutes. Makes 12 muffins.
